quinoa

makes 2 servings

  • 1/2 onion, diced

  • 1 tablespoon olive oil

  • 1/2 cup dry quinoa

  • 1 cup stock (chicken or veggie)

  • 1/2 teaspoon salt

  • 1/2 teaspoon herbs de provence

in small sauce pan, heat olive oil on med heat

add onion and saute till translucent

add dry quinoa and saute for 1 min

add stock and let come to boil

lower heat to low and cover

cook for 20 mins or until liquid has absorbed and grains are cooked (add boiling water if necessary to finish cooking)
