quick pickled red onions
2 red onions
1 cup white vinegar
1 cup boiling water
1 cup white sugar
1 tablespoon black peppercorns
a few cloves
2 pint sized mason jars
cut red onions in half and slice thin(ish)
in a sauce pan, bring vinegar, water, sugar and spices to a boil
add the red onion and simmer for 2-3 mins
pull out the red onions and split between 2 mason jars
fill the remaining space with the pickling liquid, leaving bit of air at the top
close the lids and let cool at room temp
the lids should pop and seal after a little while
store in the fridge
use to top tacos and other things, or just eat by themselves
